Heifer Station Vineyard is situated between 860-900m elevation on the undulating slopes of Mt Canobolas. Pinot Noir was planted in the vineyard in 1999 and 2012 using the MV6 clone. Recent plantings include 667, Q932, and 777.

Tasting note.

Mid-Crimson garnet with a brick red hue.

Earthy complexity with wild woody herbs and rose petal florals with dark cherry depth on the nose. Maraschino liqueur over amaro and nutmeg with hints of liquorice adding a layer of intrigue. While there is fruit at the heart of the aroma of this Pinot it also has hints of wood smoke, charcuterie, and a roasting pan character complexity.

A full-flavoured entry with wild forest berries and the ever-present dark cherry leading from the front. There is a core of fruit wrapped in bramble, wild herbs and red liquorice, driven by gentle acid and fine-grained tannins. The texture is supple yet tactile and mouth coating, giving length and persistence with very finely balanced oak adding structure and depth.

Warm and generous on the finish.

 A blend of 777, 667 and MV6 clones with 15% Whole bunch inclusion, matured in 20% new French Oak.

 This wine almost commands some richly flavoured dishes, Miso Braised Pork Belly, Finished on the Hibachi with grilled Eggplant from the Habichi toop.
