Heifer Station vineyard is situated between 860-900m elevation on the undulating slopes of Mt Canobolas. Planted in 2005 using FVD1V7 Clone on an easterly aspect to maximise on the morning sun.
During the growing season the vines are both shoot and bunch thinned to reduce yield. The result is a small but quality crop of around 5 tonnes per hectare. Fruit was picked in late February/early March before a major weather event. Once received the fruit is gently pressed to minimise colour and tannin extraction. After three days, indigenous yeast starts fermentation and continues for around 18 days in closed tanks. The wine is then racked to old French oak barrels for a period of 9 months.
An aromatic Pinot Gris that shows lovely texture across the pallet. Subtle pear, spice and Honeycomb add to this incredibly complex, textured example of Pinot Gris.
