Vintage 19 ‘The Home Paddock’ Shiraz
Heifer Station vineyard is situated between 860-900m elevation on the undulating slopes of Mt Canobolas. Shiraz was planted in the vineyard in 1999 and makes up 3.8 Hectares of the 25 Hectares of fruit under vine.
During the growing season the vines are both shoot and bunch thinned by hand to reduce yield. The combination of careful crop management and the effects of a dry grown vintage resulted in a small but excellent quality crop. The fruit is hand picked and hand sorted to ensure the winery receives fruit in the best condition possible. Fruit is then left whole in open fermenters where native yeasts start the wild fermentation process which is an integral part of the Heifer Station style. The fruit is gently punched down to extract colour and tannin. Once primary fermentation is complete the wine is wracked to our very best new French oak barrels to undergo malolactic fermentation and lees stirring. Bottling takes place 12 months after harvest.
Tasting Note:
Deep garnet red with a crimson hue.
Dark plum and spicy perfume fill the nose, a hint of cassis and violet florals add aromatic complexity with some anise and liquorice depth. Ripe plum fruit characters carry onto the palate with plenty of peppery spice and subtle, integrated oak giving it an elegant textural support. Fine-grained tannins, and whole bunches in the ferment provide a layered wine, with form and a persistent line and length.
