Heifer Station vineyard is situated between 860-900m elevation on the undulating slopes of Mt Canobolas. Since 1999 the vineyard has a history of producing high quality Chardonnay. Chardonnay is one of the more prolific varieties grown on the property.
The fruit was picked in late February/early March in what was an ideal growing season. Once received the fruit was gently pressed to minimise tannin extraction. The juice was then settled overnight before being racked off lees. The wine was racked to French oak barrels - 1/3 new.
After racking, the wine is left in the oak for 12 months to establish texture and for yeast autolysis to occur. The wine is then graded and final blending takes place.
An elegant cool climate Chardonnay that displays a hint of new oak on the nose with subtle lees interest across the pallet. Bright white peach and citrus notes carry the wine. Medium weight, complex and textured.
